Applesauced Meat Loaf

Ingredients:


1 pound lean ground beef

1 pound ground pork

1/2 cup dry bread crumbs

1/4 cup minced onion

1 tablespoon minced garlic

2 large eggs

1/2 cup cold milk

1/2 cup ketchup

1 1/2 teaspoons salt

1 1/2 teaspoon freshly ground black pepper

1 1/2 teaspoons ground allspice

1 1/2 teaspoons dried thyme -- crumbled

1 cup gingered applesauce -- or store-bought applesauce

3 tablespoons apple cider -- or apple juice

2 tablespoons firmly packed light brown sugar

1 tablespoon dijon mustard
 

Preparation / Directions:


How to Prepare: Preheat the oven to 375. Lightly butter a roasting pan. Combine the beef, pork, bread crumbs, onion and garlic in a large mixing bowl. In a separate bowl, lightly beat the eggs. Beat in the milk, ketchup, and seasoning and add the meat. Mix with your hands just until well combined. Do not over handle. (A wooden spoon won't do the job as well as your hands.) Shape the meat into an oval loaf in the buttered roasting pan and bake until evenly browned, 50 minutes. Combine the applesauce, apple cider, brown sugar, and mustard in a small saucepan, and heat over medium heat until the sugar is dissolved, about 2 minutes. Pour the applesauce mixture over the meat loaf, covering it well, and continue baking until the top is golden brown, 20 to 25 minutes longer. Remove the meat loaf from the oven and let it rest for 5 minutes before servin
