Black Bean Gazpacho

Ingredients:

3 cups tomatoes - chopped, peeled, and seeded
12 Ounces vegetable juice cocktail - hot style
1 cup ham - cubed fully cooked
15 Ounces black beans or garbanzo -- rinsed, drained
1/2 cup cucumber - chopped seeded
1 medium yellow summer squash -- and/or zucchini
1/2 cup sweet pepper - chopped green or yellow
1/4 cup green onion - thinly sliced
2 tablespoons Italian salad dressing
1 bottle hot pepper sauce (optional)
 

Preparation / Directions:

IN A LARGE MIXING BOWL combine tomatoes, juice, ham, beans, cucumber or squash, chopped pepper, green onion, and dressing. Cover and chill for 2 to 24 hours. If desired, serve with bottled hot pepper sauce. SOURCE: BETTER HOMES AND GARDEN, July 1993 Shared by Cate Vanicek
