Southwestern Black Beans And Rice

Ingredients:


1 cup dry black beans

3/4 cup sliced carrots

3/4 cup sliced celery

1/2 cup chopped onions

1 medium jalapeno pepper -- minced

1/4 teaspoon ground red pepper

1 teaspoon ground black pepper -- to taste

1 cup diced cooked ham

1/2 cup red bell pepper -- cut in thin strips

1/2 cup green bell pepper -- cut in thin strips

2 teaspoons vegetable oil

2 cups hot cooked rice
 

Preparation / Directions:


Bring 1 quart water to a boil in Dutch oven or large saucepan; stir in beans, carrots, celery, onions and peppers. Cover and simmer 2 1/2 hours, stirring occasionally. Add ham; simmer an additional 15 minutes. Cook red and green peppers in oil until tender crisp; stir into rice. Serve beans with rice. Makes 4 servings.
