Sooz's Sicilian Fusilli

Ingredients:


14 ounces tricolor pasta

1 tablespoon olive oil

1 teaspoon dried basil

1 teaspoon pepper

4 medium carrots -- julienned

1 medium yellow bell pepper -- cut in strips or 1/2

1 can black beans -- rinsed and drained

1 can Italian Style tomatoes

1/2 can black olives -- cut in half

1/2 cup grated parmesan cheese
 

Preparation / Directions:


Cook and drain pasta. While pasta is cooking, heat oil in 10-inch skillet over medium-high heat. Cook basil, pepper, carrots, and bell pepper in oil about 3 minutes, stirring occasionally, until carrots are crisp tender. Stir in pasta, beans, tomatoes, and olives. Cook about 5 minutes, stirring occasionally, until hot. Sprinkle with cheese.
