Pinto Bean Coconut Pie

Ingredients:

1 cup beans -- pinto beans
1 cup coconut
1 stick oleo
1 cup sugar
2 large eggs
1 teaspoon vanilla
1 crust unbaked pie shell
 

Preparation / Directions:

Cream oleo, sugar, eggs and stir in coconut. Mash beans, whip well all ingredients. Pour into unbaked pie shell. Bake at 350 degrees for 1 hour.
