2 cups red beans
2 1/2 pounds short ribs - beef -- 2 to 3 pounds
1 large dry onion -- chopped
1 cup shortening
1 cup celery or tops
1 cloves garlic -- optional
1 teaspoon salt and pepper
2 cups tomatoes
3 cups enough water to cover

Preparation / Directions:

Soak beans over night. In the morning cook until beginning to be tender. Brown onion and short ribs in hot fat. Add cooked beans, celery or celery tops, garlic if desired, salt and pepper, tomatoes and enough water to cover. Simmer about two hours or until beans and meat are tender. Stir occasionally and add more water as needed.
