Raisin Nut Bars

Ingredients:


1 pound seedless raisins

2 cups water

3 cups self-rising flour

1 teaspoon ground cinnamon

1 teaspoon nutmeg

1 teaspoon mace

1/2 cup butter or shortening

1 cup sugar

2 large eggs -- beaten

1 cup nuts -- chopped (optional)
 

Preparation / Directions:


Makes 2 dozen 1. Simmer raisins in water 15 minutes; cool slightly. 2. Stir together flour, cinnamon, nutmeg and mace. 3. Cream together butter and sugar until light and fluffy. 4. Beat in eggs; add raisin mixture with water. 5. Thoroughly blend flour mixture into creamed mixture; fold in nuts. 6. Pour into greased 15 1/2 x 10 1/2-inch jelly-roll pan. 7. Bake in preheated 325 F. oven 30 minutes. 8. Cool 10 minutes before removing from pan; cut into 2 x 3-inch bars.
