Frosted Spicy Pumpkin Bars

2 cups sifted flour
4 teaspoon baking powder
1 1/4 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon ginger
1/2 teaspoon salt
1/2 cup shortening
1 cup brown sugar packed
1/4 cup sugar
4 large eggs
16 ounces pumpkin (2 cups )

Preparation / Directions:

Sift together flour, baking powder spices and salt; set aside. Cream together shortening, brown sugar and sugar in bowl until light and fluffy, using electric mixer at medium speed. Add eggs, one at a time, beating after each addition. Beat in pumpkin. Gradually stir dry ingredients into creamed mixture, mixing well. Spread mixture into greased 15 1/2 x 10 1/2 x 1 inch jelly roll pan. Bake in 350 degree oven 30 minutes or until top springs back when touched lightly with finger. Cool in pan or rack. Prepare and frost with Cream Cheese Icing. Cream Cheese Frosting: Combine in bowl: 1 (3 oz.) pkg. softened 1 T. margarine cream cheese 2 1/2 cups sifted 1 tsp. grated lemon rind Confectioner's sugar Pinch of salt 1 T. milk Stir until smooth with spoon.
