Apricot Honey Oat Bars

Ingredients:

1 1/2 cups rolled oats -- not instant
1/2 cup dried apricots -- finely chopped
1/2 cup honey
1/4 cup fat-free plain yogurt
2 large egg whites
2 tablespoons wheat germ
2 tablespoons flour
3 tablespoons margarine -- melted
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
1/4 teaspoon salt
 

Preparation / Directions:

1. Preheat oven to 325 degrees. 2. Spray 8 inch square baking pan with non stick cooking spray 3. In a large bowl combine all ingredients; mix to blend 4. turn mixture into prepared pan, pat down and smooth top. 5. Bake until center is firm and edges are lightly browned, about 30 minutes. 6. Cool and cut into squares. Freeze wrapped separately in plastic wrap, then in Large Freezer Bag or Container.
