Barbecue Sauce - Microwave

4 tablespoons unsalted butter
1 medium onion -- chopped
1 clove garlic
1/2 cup diced celery
1 cup water
1 cup catsup
1 medium diced red pepper
1/4 cup fresh lime juice
2 tablespoons cider vinegar
1 tablespoon Worcestershire sauce
1 slice lime cut in half
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
3 dashes Tabasco sauce
1 teaspoon salt to taste
1/4 cup chopped fresh coriander

Preparation / Directions:

Microwave butter, onion and garlic in a medium microwave safe bowl, covered with plastic wrap, on high power for 2 minutes. Stir in celery and microwave covered for 2 minutes. Stir in remaining ingredients except coriander until blended. Microwave covered for 7 minutes, stirring halfway through cooking. Puree sauce in a blender bowl or food processor. Transfer to bowl and stir in all but 1 tb coriander. Garnish with remaining coriander. Serve warm or at room temperature. Makes 2-1/2 cups. 81 calories per 1/4 cup.
