Ambrosia Cold soup

A sexy, creamy, cold soup... perfect for hot, balmy summer evenings!


1 medium avocado (6 ultra thin slices out and put aside)
1 cup mild yogurt
1/4 teaspoon sea salt
1/8 cup fresh mint leaves
1 Tablespoon fresh lemon juice
---for garnish:
2 medium avocado slices
1 teaspoon fresh cracked blacked pepper
2 dash olive oil
2 pieces mint sprigs

Preparation / Directions:

Put top ingredients in blender and add 1/2c H20. Blend until absolutely creamy. Pour into 2 soup bowls. Garnish with 3 slices avocado each, some cracked pepper, and a squiggle of olive oil. Enjoy...
