Plantains In Coconut Milk

Ingredients:


4 medium plantains -- peeled and sliced

1/4 teaspoon salt

1 teaspoon curry powder

1/2 teaspoon cinnamon

1/8 teaspoon cloves

1 1/2 cups coconut milk
 

Preparation / Directions:


Combine all ingredients except coconut milk in a heavy pot. Pour in 1 c coconut milk and simmer over a low heat until the plantain is tender and milk is absorbed. Add more milk if necessary. Serve hot.
