Stuffed Mushrooms

1 pound Mushrooms
1/2 pound Italian sausage, mild
2 tablespoons Onion, chopped
1 clove Garlic , crushed
1 teaspoon salt and Pepper to taste
1/3 cup Bread crumbs, fine
1/4 teaspoon Oregano
1 tablespoon Parsley, chopped
3 tablespoons Grated Parmesan cheese

Preparation / Directions:

Wash and drain mushrooms. Remove and finely chop stems. Peedl off sausage casing; finely chop meat. Heat oil, toss mushroom caps in oil until coated. Remove and set aside. To oil in pan (add more if necessary) saute mushroom stems, sausage, onion and garlic until brown. Toss with bread crumbs, herbs and seasoning and cheese. Fill mushroom cap cavities with mixture rounding tops. Arrange in shallow pan. Bake at 350 for 2 minutes.
