Roasted Garlic And Goat Cheese Crostini

1 large head of garlic -- cloves separated (unpeeled)
2 Cup pure olive oil
16 ounces baguette -- cut diagonally into
12 ounces soft fresh goat cheese -- crumbled
1 bunch chopped fresh italian parsley

Preparation / Directions:

Preheat oven to 350 degrees. Arrange garlic cloves in small baking dish. Drizzle with oil. Bake garlic until very tender, about 20 minutes. Maintain oven temperature. When cool enough to handle, peel garlic and transfer to small bowl. Mash with fork. Add goat cheese and mix well. Season to taste with salt and pepper. Arrange baguette on baking sheet. Brush with lightly with oil. Bake until golden, about 10 minutes. Spread garlic mixture on each slices. Sprinkle with parsley. Arrange on platter and serve. Prep Time: 10 minutes Cook Time: 30 minutes Makes: 6 servings Crostini are wonderful for cocktail parties. You can either pass them or just set them out on a platter and let your guests dive in.
