Herbed Stuffed Eggs - Readers Digest

12 large eggs -- hard boiled
2 tablespoons pimentos -- finely chopped
1/2 cup garlic and herb cheese spread
1/4 cup dijon mustard
1/4 cup mayonnaise
1 medium scallions -- sliced for garnish
1/4 cup scallions -- finely chopped

Preparation / Directions:

Halve eggs lengthwise. Scoop out yolks into a large bowl; set egg white halves aside. Mash yolks; blend in cheese spread, mayonnaise, scallions, pimentos and mustard until smooth. Spoon or pipe yolk mixture into egg white halves. Garnish with sliced scallions and serve.
