Cucumber-Dill Rounds

Ingredients:


1 medium cucumber -- sliced

1/2 cup bottled vinaigrette

1 package cream cheese -- softened (8 oz.)

3 tablespoons country dijon mustard

1/4 teaspoon dill weed

1 loaf toasted bread rounds -- 2-inch diameter

1 teaspoon cracked pepper

1 bunch tiny parsley sprigs
 

Preparation / Directions:


Marinate cucumber in vinaigrette 1 hour; drain. Combine cheese, mustard and dill weed; mix well. Spread approximately 2 teaspoons mixture on each toast round. Top with a cucumber slice and a sprinkle of pepper. Garnish each appetizer with parsley sprig. 24 appetizers
