Zahtar

ZahtarA spice blend found in Middle Eastern and North African cooking. To make it, sesame seeds, powdered sumac, and dried thyme are ground together. Zahtar is used to flavor meats and vegetables, or mixed with oil and used as a spread for bread.

Zakuska; zakuski; zakouski

Zakuska is a Russian term used for an assortment of cold or hot appetizer dishes consumed before the proper meal, similar to the Scandinavian buffet table, smorgasbord. The word zakuska, meaning a snack.

Zante grape

A very small variety of grape that usually grows to no more than 1/4 in diameter. It is seedless and the flavor is very sweet. Most of the Zante grape crop in the United States is grown in California. The grapes originated in Greece where a large quantity is still produced. Most of the Zante grapes are dried to be used as dried currants.

Zombie

The Zombie is a drink or cocktail made of Rum, Apricot Brandy, Orange Juice, Pineapple Juice, Lime Juice, Sugar, Crushed Ice. It is reported that it will help you over come a hangover.

Zinfandel

Zinfandel is a grape variety that has been important almost exclusively in California. The Zinfandel grape can make solid red wines with good fruit and structure. It was a popular variety with home winemakers during the American prohibition era because its thick skins allowed the grapes to ship without damage. It later (late 1970's and early 1980's) became popular for the wines produced from it with forward fruit flavors and spicy overtones. Zinfandel declined in popularity in the mid 1980's and became unprofitable to grow until White Zinfandel was introduced. White Zinfandel is a Zinfandel rose that is left slightly sweet with an acid balance. Recent DNA tests indicate that Zinfandel is actually the same as the Primitivo grape found in Italy.

Yuzu

Yuzu is a Japanese citrus. It is like a lemon and has yellow to orange skinned citrus, usually medium sized, with highly fragrant rind and flesh. Flavor is acidic and tart. The fruit is relatively rare, and highly prized.

Whelk

A whelk is a large marine gastropod (snail) found in temperate waters. Whelks are different from, but sometimes confused as, conches (pronounced Konks). Whelks are scavengers and carnivores, equipped with an extensible proboscis that is tipped with a file-like radula. The radula is used to bore holes through the shells of clams, crabs and lobsters. They also have a large, muscular foot with which they hold their victims.

Whetstone

Sharpening stones are used to grind and hone the edges of steel tools and implements. Examples of items that may be sharpened with a sharpening stone include scissors, knives and tools such as chisels and plane blades.

Oil stones, also known as whetstones, are composed of a variety of materials, natural and man made. These types of stone are usually lubricated with oil, hence the name, although water may be used instead. The purpose of the lubrication is to aid the cutting action and to carry away the swarf. They come in a variety of shapes. Some shapes are designed for specific purposes such as sharpening scythes or drills.

Whey

Whey or milk plasma is the liquid remaining after milk has been curdled and strained; it is a by-product of the manufacture of cheese or casein and has several commercial uses. Whey is used to produce ricotta and gjetost cheeses and is used to make many other products for human consumption and as an animal feed. Whey proteins mainly consist of a-lactalbumin and ß-lactoglobulin. Depending on the method of manufacture, it may also contain glycomacropeptides (GMP). Whey is now marketed in two forms, which are related to the processing method for the product: Whey protein concentrate (WPC) and Whey protein isolate (WPI). Whey protein concentrate has anywhere between 29% and 89% protein depending upon the product. As the protein level in whey protein concentrate decreases the amounts of fat and/or lactose usually increase. Whey protein isolate consists of over 90% undenatured whey protein. It is lower in fat and lactose and higher in protein and calcium than whey protein concentrate. The whey protein separated from this mixture is often sold as a nutritional supplement. It can also be used industrially as an egg albumen replacment. In addition, liquid whey may contain lactose, vitamins, and minerals and traces of fat. There are indications that regular consumption of whey is beneficial in nutrition for physical training, fat metabolism, wound healing, age-related weight and bone-density loss, and prevention and treatment of conditions such as parkinson's disease, heart disease, cancer, and diabetes (through weight loss and improved insulin sensitivity). People who are allergic to dairy proteins may also have an allergic reaction to whey.
