MYTH: You only have to worry if an egg dish has mayo in it.



It is the protein in eggs, and egg dishes, that provide the ideal medium for bacteria to grow. Bacteria grow most rapidly between 40 and 140 degrees F. All egg dishes should be served immediately after cooking. For buffet-style serving, hot egg dishes should be kept hot and cold egg dishes cold. Cooked eggs (including hardboiled eggs and egg-containing foods) should not sit out for more than 2 hours.
