Freezing Baked Goods



Most baked goods will keep very well in the freezer. Breads tend to stale very quickly in a refrigerator, but they will stay fresh for several weeks in the freezer. Unless a recipe specifically tells you otherwise, defrost all baked goods in their wrappers at room temperature. If you unwrap the baked item before thawing, moisture will condense on the outer surface and make it soggy. A microwave oven can be use for the defrosting if you are in a big hurry; however, it needs to be done very slowly with frequently turning of the baked good. Do not overheat baked goods in the microwave oven, or they may become 'petrified', i.e. very hard. Baked goods wrapped in foil may be gently reheated in a low conventional oven.
