Basil (Ocymum basilicum)
Basil was once considered a sacred herb in ancient Italy and France. Women were not allowed to pick it; male religious leaders gathered it in a special ritual. To grow: This annual grows to a height of approximately 2 feet. To encourage bushy growth, pinch off the flower buds as they appear. As a seasoning: Best used fresh; it loses most of its flavor when dried. Use in tomato sauces, beef or fish dishes, pâtés, creamy sauces and pesto. Basil is also good on fresh or cooked vegetables. |
