Rosemary was a favorite plant in the Middle Ages, not only for its supposed medicinal value but as a symbol of the declaration of love. Many superstitions are attached to this herb, and in some countries it's usual to put a rosemary branch in the hand of the dead.
To grow: Rosemary is actually an evergreen shrub but is considered a tender perennial. Although it can tolerate lower light than most herbs, it's sensitive to cold temperatures. Misting the foliage twice a week is recommended. As a seasoning: Because it's quite pungent, use rosemary sparingly in meat dishes (such as in baked chicken). If rosemary is picked before it flowers, then dried and crumbled, it keeps well; fresh, it can be bitter. |
