Ingredients:


1 can yellow hominy -- (15 1/2-oz), drained

1 can black-eyed peas -- (15-oz), drained

3 medium green onions -- finely chopped

2 cloves garlic

1 large tomato -- chopped

1 medium green pepper -- seeded and diced

1 medium jalapeno pepper -- seeded and minced

1/3 cup chopped fresh parsley

1/4 cup chopped onion

1/2 cup commercial zesty italian salad dressing

1 bunch fresh parsley sprigs - garnish

1 package tortilla chips
 

Preparation / Directions:


Combine first 9 ingredients in a medium bowl; stir well. Pour salad dressing over black-eyed pea mixture; toss gently. Cove and chill thoroughly. Toss again before serving. Garnish, if desired. Serve with tortilla chips. Note: I used the Good Seasons Oil Free Dressing Mix and it worked very well.
