Baked Zucchini

Ingredients:

2 small zucchini -- (or 1 large)
2 large eggs -- beaten
1/3 cup cracker crumbs
1/4 cup salad oil
1 tablespoon minced onion flakes
1 dash parsley -- fresh or dried
1 teaspoon salt to taste
1 dash garlic salt -- pepper, thyme
 

Preparation / Directions:

cut ends off squash. Boil until tender in salted water. Cut lengthwise, scoop out pulp and mix with ingredients. Fill shells and bake at 350 for about 20 minutes.
