Preparation / Directions:Cut celery into 1/2 inch dice and blanch in boiling water for about 3
minutes.
Rinse immediately in cold water and set aside.
Place peanuts in a small sauce pan and cover with cold water.
Bring to a boil and simmer for 15-20 minutes until soft.
Combine peanuts and celery and add sesame oil, vinegar, juice, and salt to
the mixture and toss until all the ingredients are well blended.
