Roasted Red Potatoes With Garlic And Rosemary

1 pound small red potatoes
12 cloves garlic
3 tablespoons olive oil
1 sprig fresh rosemary -- stripped from the stem
1 teaspoon salt to taste
1 teaspoon pepper to taste

Preparation / Directions:

Preheat oven to 400 degrees. Wash and dry red potatoes (leaving skins on). Cut into quarters and place on cookie sheet. Peel garlic cloves and slice into pieces about the size of slivered almonds. Toss potatoes with olive oil, garlic pieces, rosemary and salt and pepper. Bake in oven about 30 minutes, turning as necessary to brown evenly. Serve immediately. (Note that garlic will get very black in this process, but it's delicious! If you like your garlic less done, add it about halfway through the cooking
