Rice-Vegetable Delectable

Ingredients:


1/2 cup onion -- chopped

1 cup broccoli -- chopped

1 tablespoon butter or margarine

2 cups cooked rice

1 can whole kernel corn -- (8 ounce)

1 can tomatoes -- (16 ounce) drained and chopped

12 teaspoons salt

1/4 teaspoon pepper

1/4 teaspoon oregano
 

Preparation / Directions:


Place onion, broccoli and butter in a 2 quart casserole. Cover. Microwave at high (100%) until broccoli is crisp tender, and onions are opaque, 5 to 6 minutes. Add rice, corn and tomatoes. Stir in salt, pepper and oregano. Mix well. Cover. Microwave at medium high (70%) until heated through, 7 to 8 minutes.
