Potato Creole

Ingredients:


1/4 cup vegetable oil

3 medium potatoes -- peeled and sliced

1 medium Onion -- sliced

2 cups tomatoes -- chopped

1 teaspoon salt and freshly ground

1 teaspoon black pepper to taste

1 teaspoon dried thyme

1 dash cayenne pepper
 

Preparation / Directions:


Heat the oil in a large skillet on medium heat. Add the potatoes and onion and saute for 10 minutes. Add the tomatoes, salt, pepper, thyme and cayenne. Bring to a boil, then reduce the heat, cover and simmer for 30 minutes, or until the potatoes are tender and the sauce has thickened.
