Mixed Vegetables, Spanish Style

Ingredients:


1/2 cup minced ham

1/2 cup minced onion

2 clove garlic

2 tablespoons olive oil

10 3/4 ounces condensed tomato bisque soup

1/3 cup water

2 tablespoons vinegar

8 cups cubed eggplant -- (about 1 1/2 lb.)

9 ounces frozen italian green beans

1 medium green pepper -- cut in strips

3 Cup hot cooked rice
 

Preparation / Directions:


1. Brown ham and cook onion with garlic in oil until tender in a large heavy pan. 2. Blend in soup, water and vinegar. 3. Add eggplant and green beans; cover and cook over low heat 10 minutes. 4. Add green pepper; cook 5 minutes more, or until done, stirring occasionally. 5. Serve with rice. NOTE: This dish is similar to a vegetable combination meal the French Basques called piperade. This is often served with egg dishes and you can vary the vegetables to your family's tast
