Minted Peas With Orange

Ingredients:


2 cups fresh green peas -- about 2 lbs, or

1 1/3 packages frozen green peas -- 10oz

2 teaspoons unsalted margarine

2 teaspoons grated orange rind

1 tablespoon minced fresh mint -- or

1/2 teaspoon mint flakes

1/8 teaspoon black pepper
 

Preparation / Directions:


In a small saucepan bring an inch of unsalted water to a boil; add peas and cook, covered, 3 minutes or until tender. Drain, transfer to a bowl and set aside. Using same sauce pan melt margarine over moderately low heat; add orange rind and cook, uncovered, stirring for 1 minute. Add mint, pepper and peas; cook and stir for 2 minutes or until heated through.
