Ingredients:


2 pounds cabbage

1/2 cup kosher salt

4 cups water

1 teaspoon crushed red chiles

1 teaspoon sugar

1 cup onion

1 teaspoon garlic

1/2 teaspoon ginger
 

Preparation / Directions:


combine cabbage, water, and salt allow to stand for 4-6 hours drain, rinse, and drain well combine with remaining ingredients pack tightly into a crock or extra-large jar cover and allow to ferment in a cool-dry place for 3-4 days serve at room temperature
