KIDNEY BEAN AND CHEESE SALAD

Ingredients:


1/2 cups Mayonnaise or -- salad dressing

1/2 teaspoon Salt

1/2 teaspoon Prepared mustard

1/4 teaspoon Sugar

1/8 teaspoon Pepper

15 ounces kidney beans -- Rinsed and drained

1 cup Diced mild cheddar or colby -- Cheese

1/3 cup Stalk celery -- thinly sliced

1/4 cup Sweet pickles -- chopped

2 tablespoons Finely chopped onion

2 large Hard-cooked eggs -- chopped
 

Preparation / Directions:


Mix mayonnaise, salt, mustard, sugar and pepper in large bowl. Add kidney beans, cheese, celery, pickles and onion; toss. Stir in eggs. Cover and refrigerate about 1 hour or until chilled. Serve on lettuce leaves, if desired.
