Green Chile Corn With Cream Cheese

Ingredients:


2 tablespoons unsalted butter

1 clove garlic -- minced

6 ounces cream cheese -- cut in several chunks

1/4 cup milk

4 cups corn kernels -- fresh or frozen

1/2 cup chopped roasted green chile -- preferably New Mexican or Poblano - fresh or frozen

1/2 teaspoon salt -- or more, to taste

1/4 teaspoon fresh-ground black pepper

1/4 cup dry bread crumbs

1/2 teaspoon paprika
 

Preparation / Directions:


Preheat the oven to 350 degrees. Grease a medium baking dish. In a saucepan, melt the butter over medium heat. Saute' the garlic in the butter until it is soft. Add the cheese and milk, and reduce the heat to low. Cook, stirring occasionally until the cheese melts. Remove the saucepan from the heat. Mix in the corn and green chile, and add salt and pepper to taste. Pour the mixture into the baking dish. Top with the bread crumbs, and sprinkle paprika over the top. Bake 25 minutes, or until the casserole is bubbly. Serve it immediatel
