Baked Beet Greens

Ingredients:


1 bunch beet greens

1 teaspoon salt

1 tablespoons butter

1 tablespoons basalmic vinegar
 

Preparation / Directions:


Wash the leaves thoroughly, leaving a bit of water on the leaves. Put in a large kettle. Sprinkle with just a little more water, dash of salt if you use it. The bottom of the pan should have just a bit of water in it. Put a lid on it, turn the burner on hi. As the greens begin to steam, they will wilt. Stir them, turn the heat to simmer, continue till all leave are wilted - 2-3 minutes. I add a pat of butter, a bit of balsamic vinegar is also nice. All this can be served on the side also.

NOTES : Remember bring in about twice - or more - as much as you want to eat - it shrinks.
