Rhubarb Fool

Ingredients:


1 pound rhubarb -- pureed

3/4 cup brown sugar

3/4 cup whipped cream

1/8 teaspoon almond extract
 

Preparation / Directions:


Cook rhubarb until soft, about 20 minutes. Puree. Add brown sugar and cool. Add whipped cream and almond extract to the cooled puree.
