Yom Tov Turkey Pot Pie

Ingredients:


1 package frozen vegetables for stew -- 1lb, cooked

1 package frozen peas -- 1lb, cooked

2 cups leftover cooked turkey -- cut in 1/2 inch cubes

2 cups turkey or chicken gravy

3 tablespoons freshly chopped parsley

1/4 teaspoon freshly ground pepper

1 recipe pie crust -- or store bought
 

Preparation / Directions:


Drain cooked vegetables, place in an oven safe 2 quart cooking dish along with turkey, gravy, parsley and pepper. Mix well. Unfold pie crust, if bought, and place on top of dish. Trim edges to fit, with a one inch trim, and secure edges to the dish by overlapping the edge. Make a few slits on the crust to allow steam to escape. Bake in preheated 400 degree F. oven for 25 to 30 minutes or until crust is brown and mixture is hot and bubbly.
