Smoked Turkey Quesadilla

Ingredients:


6 tortillas flour tortillas 10 inch

2 cups shredded monterey jack cheese -- ( about 8

1/2 pound smoked turkey -- shredded

1/4 cup finely chopped red onion

1/4 cup chopped fresh cilantro

2 tablespoons butter

1 jar garlic salsa -- (24 ounces) medium

1/2 cup regular or light sour cream
 

Preparation / Directions:


Preheat oven to 350 degrees. Divide cheese, turkey, onion and cilantro over half of each tortilla. Fold other half of tortilla over, enclosing filling completely. Melt 1 tablespoon butter in heavy large skillet over medium-high heat. Working in batches, cook quesadillas in skillet until brown and crisp, adding remaining butter to skillet as necessary, about 2 minutes per side for each batch. Transfer quesadillas to baking sheet. Bake until cheese melts, about 5 minutes. Cut quesadillas into wedges. Serve with salsa and sour cream. Prep Time: 10 minutes Cook Time: 20 minutes Makes: 4 servings Quesadillas are easy to vary. You can use whatever kind of cheese you like and add whatever you want to the filling, from beans to seafood to vegetables. Personally, I like the following combination of smoked turkey and Monterey Jack cheese.
