Italian Tuna Noodle Casserole

13 ounces canned solid white tuna in water
1 Cup celery chopped
1/2 Cup onions chopped
16 ounces canned tomatoes
6 ounces tomato paste
1/2 Cup water
1/2 teaspoon garlic powder
1 teaspoon oregano
1/2 teaspoon basil
1/4 teaspoon fennel seeds (optional)
8 ounces egg noodles
2 tablespoons grated Parmesan cheese

Preparation / Directions:

Drain tuna. Saute celery and onion in water until tender. Add tomato, tomato paste, water, garlic powder, oregano, basil and fennel (if using). Cover and simmer 20 minutes. Meanwhile cook noodles. Lightly grease a 2 qt. casserole. Leyer in half the noodles. Top with half the tuna mixture and 1 Tbsp. cheese. Repeat with remaining ingredients. Bake 30 minutes at 350 F.
