Basil Topped Tomatoes

Ingredients:


1 pint cherry tomatoes

2 teaspoons salt

1/3 cup fresh basil leaves

1 large egg

1 large egg yolk

1/4 teaspoon salt

1 teaspoon fresh lemon juice

1/2 cup corn oil

1/2 cup olive oil
 

Preparation / Directions:


halve tomatoes and sprinkle lightly with salt invert onto a cooling rack or towel and allow to drain add basil to a food processor or blender pulse to chop briefly add egg, yolk, salt, and lemon juice process until fluffy with motor running, add oils in a thin-steady stream process until thickened arrange tomatoes, cut side up, onto a serving platter place a small dollop of basil mayonnaise on top of each serve chilled or at room temperature
