Thai Red Curry Dish


---Chicken or Duck even for 4 servings
3 tablespoons red curry paste
1 1/2 tablespoons veg. oil
2 1/2 cups coconut milk
1/2 cup water or chicken stock
10 medium cherry tomatoes, 2 med halved
1 can bamboo shoot
4 pieces kaffir lime leaves, halved
2 tablespoons fish sauce
1/2 teaspoon salt
1 teaspoon sugar

Preparation / Directions:

1. Put veg. oil into pot over med. heat and add red curry, add 3/4 cups coconut milk and stir to mix thoroughly. 2. Add chicken or duck and stir well until cook. Add remaining ingredients and simmer for 15 min., bring to boil and remove from heat.
