Peanut Sauce - 3

Ingredients:


1 tablespoon peanut oil

2 cloves garlic -- minced

1 teaspoon chili paste

1 tablespoon tomato paste

1/2 cup chicken broth or water

1/2 teaspoon sugar

2 tablespoons peanut butter

1/4 cup hoisin sauce

1/4 cup unsalted pan- or dry roasted -- ground peanuts

1 medium fresh Thai or serrano chile pepper -- seeded, thinly sliced
 

Preparation / Directions:


1. Heat the oil in a small saucepan. When the oil is hot, add the garlic, chili paste, and tomato paste. Fry until garlic is golden brown, about 30 seconds. 2. Add the broth, sugar, peanut butter, and hoisin sauce and whisk to dissolve the peanut butter. Bring to a boil. Reduce the heat and simmer for 3 minutes. 3. Serve warm or at room temperature, garnished with ground peanuts and chile pepper slices. Also serve as a dipping sauce for satay.
