Javanese Pork Satay

Ingredients:


1 pound boneless pork loin

---MARINADE---

2 tablespoons smooth peanut butter

1/2 cup onion -- minced

1 clove garlic -- minced

2 tablespoons lemon juice

2 tablespoons soy sauce

1 tablespoon brown sugar

1/8 teaspoon Asian hot chile sauce

1 tablespoon cooking oil
 

Preparation / Directions:


Cut pork into 1/2" cubes. Blend remaining ingredients together (a blender does this well) Marinate pork in this mixture for several hours to overnight. Thread pork on skewers and grill over hot coals for eight to 10 minutes, turning occasionally, until done. Note: If using bamboo skewers, soak skewers in water for one hour or longer to prevent burning.
