Yeast-Risen Brioche Tart

Ingredients:


4 3/4 ounces whole milk -- room temperature

2 1/4 ounces granulated sugar

3/4 ounce fresh yeast

17 1/2 ounces all-purpose flour

7 ounces pastry flour

5 whole eggs

14 ounces butter -- room temperature

1/2 teaspoon Salt
 

Preparation / Directions:


Throw first 5 ingredients into bowl and begin mixing on slow speed. Add the eggs right away to above and continue mixing. When the dough begins to clump together, add butter quickly--in small pieces. Add the salt to dough after 5 minutes using a medium to medium high speed. Total mixing time should be about 6 minutes. Proof overnight in refrigerator, covered. Roll out 1# dough into a circle and form an 8"ring mold (work with cold dough). Proof until soft, about 1.5 hours. Dimple middle with fingertips and pour 7 oz. of sour cream custard into middle. Sprinkle 2.5 to 3 ounces granulated sugar over custard, brush edges with egg whites and sprinkle with crystal sugar. Bake at 350F. for approximately 25 minutes, or until golden brown..
