Pudding Tarts - Quick and Easy

Ingredients:


3 tablespoons fat-free artificially sweetened instant pudding mix

1 teaspoon fat-free artificially sweetened instant pudding mix -- any flavor

6 tablespoons nonfat milk

1/2 cup frozen cherries -- unsweetened, pitted

1/2 teaspoon cornstarch

1/2 teaspoon cold water

2 crusts graham cracker tart shells
 

Preparation / Directions:


Whisk together the pudding mix and nonfat milk until smooth and thickened. In a small microwave-safe bowl, microwave the frozen cherries on high for 1and1/2 minutes until the cherries are soft and the juice is released. Do not drain! Mix the cornstarch and water together until smooth. Add the cornstarch mixture to the cherries, stir, and return to the microwave. Microwave on high for 30 seconds, or until the cherry mixture is thick. Place the graham cracker tart shells on a small plate. Carefully spoon half of the pudding mixture into each shell and top with the cherry mixture. Refrigerate for 1 hour or until ready to serve. 2 servings/Serving size: 1 tart
