Lemon Chess Tarts

Ingredients:


4 large eggs

2 Cups sugar

1 Stick butter -- melted

9 Tablespoons lemon juice

1 teaspoon Grated rind of 1 lemon

2 sheets Pastry-lined tart pans (size and shape of your choice)

1 cup Whipped cream -- for topping

1 pint Fresh berries -- optional
 

Preparation / Directions:


Beat eggs enough to mix. Place sugar in large bowl and stir in melted butter. Add eggs and mix well. Stir in lemon juice and rind. Put generous tablespoons of batter into each uncooked tart shell, filling to about half full. Bake at 350° for about 35 minutes or until firm and lightly brown. Top with whipped cream and garnish with fresh berries, if desired. Note: You may use the Bama or Pet Ritz frozen small tart shells. If you use these, 2 tablespoons of filling is just right. You can also prepare your own, using the many varieties of small metal tart pans available and lining them with your favorite pie crust.
