1 pound tofu -- cubed
1 package taco seasoning mix
1/2 cup water
6 whole corn tortillas
1 can refried beans
2 medium tomatoes -- chopped
1 head lettuce -- chopped
1 bottle salsa
1 Bunch scallions -- chopped

Preparation / Directions:

In large saucepan place tofu chunks in oil. With back of fork crumble tofu and cook over med. heat about 10 minutes. Add taco seasoning and water, cook till thick and tofu completely covered. Spread each tortilla with generous layer of heated beans. Add several spoonfuls of tofu mix, sprinkle with garnishes, tomato, lettuce, scallions and salsa as desired.
