Texas Stir-Fry

Ingredients:


2 tablespoons olive oil

1 medium red onion -- thinly sliced

1 medium sweet red bell pepper

1 rib bed and cut into 2x2 inch strips.

1/2 cup frozen corn kernels

1 medium size clove garlic -- finely chopped

1 tablespoon lime juice

2 teaspoons chili powder

1 dash dried cilantro

1/2 cup canned black beans

1 teaspoon salt and freshly ground pepper to taste
 

Preparation / Directions:


In a medium frying pan over medium high heat, cook the onion in the olive oil for 1 minute. Add the bell pepper, corn, garlic, lime juice, chili powder, cilantro, salt and pepper. Stir and cook Until vegetables are crisp-tender
