Pumpkin With Potato And Chilli, 10 Minute

Ingredients:


1 Small pumpkin -- grapefruit size

2 medium potatoes

1 medium red chilli

1 teaspoon salt

2 tablespoons oil
 

Preparation / Directions:


This is my fave fall recipe, I can't get enough of this for weeks. Put water under a steaming basket and put on the stove. Cut the pumpkin right through the middle so you have two halves. Now use a fork to get the seeds out. Peel the potatoes and cut them down until they are as thick as the pumpkin. Then put the two pumpkin halves, hollow side down into the steaming basket ; add the potatoes around then and close the pot. Now the steam will be caught inside the pumpkin halves and it will be done in a few minutes. Meanwhile prepare hot oil and whatever you like to add as a filling. Don't add to much. Add chilli and salt. Take the pumpkin out before it becomes to soft and fill the halves. I love the hot chilli taste in combination with the soft and almost sweet pumpkin taste. Another tip is vegan sour cream and potato as a fill
