Butternut squash over jasmine rice

Great simple recipe for whenever you want to enjoy a good dish prepare in little amount of time.
 

Ingredients:


1 package Pearl onions

1 medium Butternut squash

1 clove Garlic

1 tablespoons Spices

2 Cup Jasmine Rice
 

Preparation / Directions:


Peel, and cut in dices your butternut squash. Place them on a deep oven pan. Peel and cut in little pieces your pearl onions (you can use normal onions if you want)and put them on top of the squash. Peel and cut the garlic (the amount is to the taste) and spread it on the oven pan. Toss all together and then include some spices. I like to put salt, pepper, dill, garlic powder, onion powder but you can put any spice you like. Put in the oven preheated to 400 degrees and leave it until tender (about 20 minutes). In the meantime, with a rice cooker make some jasmine rice (or other aromatic rice). Add to the water some salt, olive oil and pepper. Whenever the squash is ready you just have to pour it on top of each serving of rice.
