Easy Vegetable Soup

Ingredients:


1 can corn

1 can green beans cut

3/4 cup celery chopped

1 cup carrots sliced

1 medium onion chopped

1 cup water

2 medium zucchini (Italian squash), sliced

2 medium yellow squash sliced

1 package sliced mushrooms (about 1 1/2 cups)

16 ounces tomato sauce

1 can French onion soup

3 tablespoons chicken boullion

3 cups water

2 cups Minute Rice

1 teaspoon Salt to taste (optional)

2 bunches green onions chopped for topping (optional)
 

Preparation / Directions:


In a large pot, combine first 6 ingredients and bring to a boil. Lower heat and add remaining ingredients. Let simmer to a low boil for 20 minutes. Remove from heat and let sit for about 20 minutes. Top with raw chopped green onions. Serve with warm bread.
