Vegetable Minestrone Soup

Ingredients:


1/2 cup chopped onion

1 medium leek -- white part only chopped

2 cloves garlic

1 can tomatoes -- crushed (28 oz)

4 medium red potatos -- quartered

2 medium carrots -- sliced

1 medium celery stalk -- sliced

1/2 cup barley

1 1/2 cups corn

1 cup peas -- (frozen)

1 can white beans -- (16 oz) (drained)

1 teaspoon basil

1 piece bay leaf

1 tablespoon salt

1 teaspoon black pepper
 

Preparation / Directions:


Saute garlic, oniions and leek. Add tomatoes and one can water, potatos, celery and carrots and cook 25 minutes. Add barley and cook 10 minutes. Add remaining ingrediants and cook 20 minutes or until barley is done. Makes about 1 gallon.
